When using a dashboard value that's a number field (in my case, "Estimate" with a unit of measure called "Days"), the dashboard does not update and in many cases just breaks entirely

Please check if the number filed aggregation is set to none. If it is none, change it to sum and check if that works.

Same thing happened to me: I updated the number field at least 3 times during the period shown in the image, and the chart didn't change: it stays at the same number it was set the first time the card was created.
